Vegetable Saagu for Set Dosa / Kurma



The best combination for Set Dosa is Chutney and Vegetable Saagu. For those not in Bangalore and yearning for this combination, here is my recipe for Vegetable Saagu and go ahead try out and relish.

Ingredients
 
 
Mixed Vegetables (Beans, Carrot, Potato, Peas)
Onion
Roasted Gram / Putani / Daliya
Salt & Sugar
2 Cups
 
1 Medium
½ to 1 Tbsp.
To Taste
To Grind
Coriander Seeds
Poppy Seeds
Clove & Cinnamon
Red Chillies/ Green Chillies
Coconut
2 Tsp.
2 Tsp.
2 Each
To Taste
2 Tsp.
Seasoning
Mustard
Oil
1 Tsp.
As reqd.
Method
1.        Dice all the vegetables and half cook and set them aside.
2.       In a pan, dry roast all the ingredients “To Grind” except the coconut. Once it cools down, grind this with Roasted Gram to smooth paste.
3.       Heat a pan with little oil and season it with mustard.
4.       Add chopped onions and sauté it for 3-4 minutes.
5.       Now add the half cooked vegetables and cook them for 4-5 minutes.
6.       Add salt and sugar to taste.
7.       Now add the ground paste and give a good mix.
8.       Adjust the consistency of the gravy as you need.
9.       Boil the Saagu for another 7-8 minutes.
10.    Garnish Saagu with Coriander leaves and serve with Set Dosa and Chutney.
