Neeru Dose / Bajjar Dose

Again a unique dosa from Karnataka especially a delicacy of Udupi.As the name says neeru means water.Neeru Dosa batter does not need fermentation…quick dosa when you feel like it!! Bet you can’t resist eating more than three. Soft and light in texture.

Ingredients
 
 
Rice
Grated Coconut
Salt
Oil
2 Cups
½ Cup
To taste
As reqd
Method
1.        Wash Rice and soak it for 4-5 hours or overnight.
2.       Drain the water and grind rice along with coconut (fresh/ frozen).
Note: Alternatives to coconut for the health conscious are Oats or Puffed Paddy Grain (Aralu). Add the same quantity of oats or puffed paddy grain instead of coconut.
3.       Add water little by little while grinding.
4.       The batter should be smooth and in a pouring (thin) consistency.
 
5.       Add Salt.
6.       Heat the Griddle / Skillet/ Tava on medium high and oil.
7.       Pour the batter on the skillet in a circular motion starting from the corner to the center. Keep pouring the batter till it covers the skillet.
 
8.       Cover with a lid; let it cook for a couple of minutes.
9.       Do not flip the dosa.
10.    Arrange the dosa on a plate.
11.     After each dosa, wipe the skillet with oil.
12.    Neeru Dosa can be eaten hot or even cold.
13.    Goes well with Coconut Chutney, Vadu Mango Pickle & Coconut oil, Mango Rasayana and even grated fresh coconut mixed with jaggery.
