Beetroot Chutney

Beetroot chutney is colorful chutney variety...Learnt from my Mother in law.
Goes well with chapatti and hot rice…..

Ingredients
 
 
Grated Beetroot
Coconut(Fresh/ Frozen)
Green chilli
Tamarind
Cumin Seeds
Salt
1 Cup
½ Cup

For Seasoning
Mustard
Red chilli
Asafetida
Oil
½ Tsp.

A Pinch
As Reqd
For Garnishing
Chopped Onion
Finely Chopped Coriander leaves
1 Tbsp.

Method
1.        In a pan take a little oil, add cumin seeds and slit green chilli and sauté for a couple of minutes.
2.       Now add grated beetroot and stir fry.
3.       Sprinkle some water and cover with a lid.
4.       Let the beetroot cook for a while may be 8-9 minutes on a low to medium flame
5.       Let it cool.
6.       Now in a blender add grated coconut, beetroot mixture, tamarind and adjust salt to taste and grind it to a chutney consistency.
7.       Do the seasoning and pour it on the chutney.
8.       Garnish the chutney with coriander leaves and finely chopped onions.
