Potato Curry for Masala Dosa


Potato curry / bhaji is a stuffing for Masala Dosa.

Method
1.        Chop onion lengthwise, grate ginger and slit green chillies.
2.       Pressure cook potatoes in the cooker.
3.       Peel and mash the potatoes.
4.       Heat oil in a pan and do the seasonings.
5.       Add chopped onion, ginger, curry leaves and green chillies. 
6.       Sauté for 3-4 minutes and sprinkle some water and cover it with a lid and cook it on a moderate flame.
7.       Cook for 7-8 minutes.
8.       Add salt, turmeric powder and mix well and cook for 2-3 minutes.
9.       Add the mashed potatoes and mix again and cook for another 3-4 minutes.
10.    Put off the stove, squeeze lemon juice and add coriander leaves and mix.
