Sweet Pumpkin Chutney



Sweet pumpkin chutney is a side dish served along with rice and also with idli.
Sweet Pumpkin Chutney with Chutney powder and ghee is an excellent combination for Idly.

Pumpkin pieces
Coconut
Tamarind Paste
Salt
1 Cup

Urad Dal
Fenugreek seeds
Dry red Chillies
Curry Leaves
1 Tbsp.
A Pinch

Mustard
Urad dal
Asafetida

Method
1.  Heat a pan and roast urad dal, fenugreek seeds and dry red chillies till light in color and set aside.
 
2.  With a little water cook pumpkin till just tender. Let it cool.
 
3.  Grind cooked pumpkin, tamarind paste, salt and coconut to smooth with a little water if necessary.
4.  Now add the roasted ingredients and run your blender and grind the chutney.
5.  Season the chutney with the given seasoning ingredients and serve.
