Aloo Methi Dry Curry


Potato and fenugreek leaves stir fry. A dry curry which goes well with roti / chapati / Paratha. Ginger and garlic are optional.

Method
1.  Boil, peel and cube the potatoes. Chop fenugreek leaves roughly. Chop onion to small pieces.
2.  Heat oil in a pan and do the seasoning. Add onion and fry for 3-4 minutes on medium heat.
3.  Add cumin coriander powder, turmeric powder and mix well. Add chopped fenugreek leaves and cook on low to medium heat for 10 minutes.
4.  Now add garam masala and salt and mix well.
5.  Add the cubed potatoes and fry for 4-5 minutes and switch the stove off.
6.  Squeeze lime juice and serve.
