Long Green Beans Dry Curry / Alasande Palya
Alasande
/ Long Green Beans is tender and slim bean that is used in Karnataka to make Palya,
Sambar / Huli, usually in functions and marriages where atleast 2-3 types of
Palyas are served! I have provided a dry variety of Palya that is cooked with
coconut and mustard (Kai Sasime), an Udupi style recipe. This goes well as accompaniment
to sambar, Rasam and curd rice and also for Chapati.

Method
1. Chop long green
beans to small pieces. Pressure cook this with a small piece of jaggery for 1
whistle.
2. In a small
blender jar add Mustard, Cumin seeds, dry red chillies and dry run the
blender to coarse powder. Add coconut now to the blender and run again and
set aside.
3. Heat oil in a
pan and do the seasoning.
4. To the
seasoning, add curry leaves and the pressure cooked long green beans. Add
salt and sauté for 3-4 minutes.
5. Add the ground
mixture (in step 2 above) to the long green beans. Saute for 7-8 minutes
(till they all blend well).
6. Serve with rice.
