Kadai Paneer


Kadai Paneer is Indian Cottage Cheese combined with onion and capsicum cooked in tomato sauce with spices. Served as a side dish for any Indian bread.

Cubed Paneer / Cottage Cheese
Cubed Red Capsicum
Cubed Green Capsicum
Finely Chopped Onion
Ginger garlic Paste
Tomato Paste
Beaten Curd
Coriander Cumin powder
Red Chilli Powder
Kitchen King masala / Garam Masala
Dry Fenugreek Leaves
Oil
Salt and Sugar

Method
1.  Heat oil in a pan and shallow fry the cubed paneer till they turn light gold in color. Drain them on a paper towel and place them in a bowl with lukewarm water.
 
 
 
2.  Now in the same pan which is on low to medium heat, add fenugreek leaves and stir. Add chopped onion and sauté for 3-4 minutes.
3.  Add ginger garlic paste and stir for a minute. Add the dry powders one by one and fry for not more than a minute.
4.  Add chopped red and green capsicum and fry for 3-4 minutes. Add tomato paste, salt and sugar and fry again for 3-4 minutes more.
 
5.  The mixture tends to become thick. Add ¼ cup of water and stir well. Now add well beaten curd and mix. Cook for a minute.
 
6.  Add the fried paneer and cook on low for 3-4 minutes. Put off the stove.
7.  Garnish with coriander leaves and serve.
Note: In general, fresh cream is used in place of curd and paneer is usually deep fried instead of shallow frying. The fried paneer is placed in lukewarm water so that it still stays soft after frying.
