Method
1. Add both the
flours (Wheat and App Purpose) to a mixing bowl (large).
2. In a separate
bowl, take warm water. To this add salt and sugar. Mix well. Add yeast and a
tablespoon of flour to the water. Let it sit for 10-15 minutes. You will
start seeing small bubbles in it.
3. Add 4 tbsp.
olive oil to the flour. Mix lightly.
4. Now mix the
yeast water to the flour and knead the dough smooth and springy. Drizzle oil
over the dough. Cover the dough with a damp kitchen towel and place the bowl
in a warm place.
5. After half an
hour the dough would have raised a little. Knead the dough a bit and push the
air out. Cover with the damp cloth again and let it rest for an hour more.
6. After an hour,
your dough would have doubled up. Knead the dough lightly pushing away the
air.
7. You can use the
dough straight away to make the base.
8. Roll the dough
to your desired size and thickness (thin or thick) according to your
preference.
Note: Usually I make a large thin crust base and a small thick crust base with this
measurement.
9. Roll the dough
just before you make the pizza. Oil the pan with olive oil, dust some flour
and roll the dough to your desired size.
