Bele Payasa (Chana Dal Payasa) is one of the many variety of Payasas that you
can relish in Udupi cuisine and served in many festivals and functions. This
is also one of my favorite payasas.

Ingredients
|
Chana Dal
Sago
Jaggery
Coconut Milk
Dry Fruits

Method
1. Cook Chana Dal
with ½ cup of water and Sago with ¼ cup of water separately in a pressure
cooker for 4 whistles.
2. Heat ½ cup of
water in a vessel. Add jaggery and stir. After the jaggery melts, filter the
syrup (to remove any impurities)
3. Boil the syrup for 4-5 minutes on low flame.
4. Add coconut milk and boil for 5-6 minutes.
5. Add the pressure cooked Chana Dal and Sago. Combine well and cook till
they are done. Adjust the consistency to your taste by adding milk/coconut
milk/ water if required. Add jaggery if required to suit your sweet tooth J
6. In a separate pan, heat a little ghee and roast Cashewnuts till they
change to light golden color. Just before switching off, add raisins and
stir. Add this garnish to Payasa and stir.
7. Serve hot!
