Ginger Garlic Paste
Turmeric Powder

Red Chilli Powder

Method
1. Dice onion,
eggplant, potato and carrot to small pieces.
2. Heat oil in a
pan, add cumin seeds and let them crackle. Add onion and sauté for 2-3
minutes.
3. Wash the rice
and keep aside.
4. Add ginger
garlic paste and fry for a minute.
5. To this add diced carrot, potato and
eggplant and stir well. Cook on medium for 3-4 minutes.
6. Add the dry
powders and give a good mix and fry for a minute or so. Add green peas and
the washed and drained rice and fry for 2-3 minutes.
7. Pour 2 ½ cups of
boiling water and mix well. Add ghee and salt and mix well.
8. Cover with a lid
and cook till the rice is done.
9. Garnish with
coriander leaves and serve.
