Aloo Matar


Aloo Matar is Punjabi dish that goes well with any Paratha/Roti. Aloo Matar can be made either dry or with gravy (wet).

Onion
Tomato
Ginger Garlic paste
Red Chili Powder
Roasted Cumin Powder
Garam Masala
Salt
Sugar

½ Cup (Frozen or Fresh)

½ to 1 Tsp.

Mustard
Cumin Seeds

As Reqd.
Method
1.     Chop tomato and onion finely. Dice potatoes to bite size.
2.     Boil potatoes, ensuring they do not become too soft. (If using microwave, boil with half glass of water for 4-5 minutes)
3.     Heat a pan with oil, make the seasoning.
4.     Add onion, saut√© for 2-3 minutes in a low to medium flame.
5.     To this add ginger garlic paste and saut√© for another 2-3 minutes.
6.     Add all the dry powders above and fry for 2 more minutes.
7.     To this, add the chopped tomatoes and peas and cook till they become soft. Add salt and sugar to taste.
8.     Add the boiled potatoes and cook till they are done.
9.     Adjust consistency based on your taste.
10.  Garnish with coriander leaves and serve.
