Vegetable Kootu


Kootu is Southern Karnataka special served even on special occasions. Usually vegetables that are sweetish are added to Kootu. Kootu is a delicious alternate to Sambar.

Toor dal
Peanuts
Tamarind Paste
Jaggery

Method
1.     Dice all the vegetables (Carrot, Beans, Potato, Sweet Pumpkin, Green Peas) to bite size pieces.
2.     Pressure cook toor dal and peanuts together and set aside.
3.     Heat a little oil in a pan and roast the given above in “To Grind” except the coconut. Roast to golden in color. Let it cool.
4.     Grind the roasted masala with coconut to a smooth paste.
5.     With a cup of water cook the vegetables till they are firm.
6.     Add salt, jaggery and tamarind paste. Bring it to boil.
7.     Now add the ground masala, red chilli powder and cooked dal and peanut.
8.     Adjust the consistency to your desire by adding water.
9.     Cook till done, it takes almost 10 minutes.
10.  Season with mustard and pour over the Kootu.
11.  Serve it with rice.
