Crunchy and Nutty Granola Bar


I love Granola nut bars (especially with different nuts, honey, and dried fruits).
On an impulse today I tried to prepare granola nut bar at home instead of buying. I tried a Granola bar variant with walnut, dates, pecan, almond, coconut and honey. I guess this has come out tasty as my husband and kids seem to enjoy.
Normally old fashioned oats is used in the preparation, but I have used the regular one.

Ingredients
Oats
Nuts
Honey
Brown Sugar
Chopped Dates
Desiccated Coconut
Butter
Vanilla Extract
2 Cups
1 Cup
½ Cup
¼ Cup
¼ Cup

1 Tsp.
Method
1.  Chop nuts (Almonds, Pecans and Walnut) finely.
2.  Toss oats on low to medium flame for 4-5 minutes. Toss the nuts and desiccated coconut separately for a minute each.

3.  Add butter, brown sugar, vanilla extract and honey in a pan and let it heat on a low flame.

4.  Mix well. When it comes to boiling point stir well and switch off the heat.
5.  In a mixing bowl add tossed oats, nuts, coconut and chopped dates. Pour the heated sugar mixture. Mix well


6.  Pre heat the oven at 300 degrees F. Now grease the baking dish with butter.
7.  Pour the prepared mixture in the baking dish / pan.

8.  Grease your palm and press the mixture nicely and evenly into the pan.
9.  Bake for 20-25 minutes until golden brown. Let it cool. Cut them to your desired size and serve.
