Pudina Rice / Mint Rice


Pudina/Mint Rice is an aromatic rice dish that attracts you with both smell and looks J This is also one pot meal.

Basmati Rice
Pudina / Mint Leaves
Chopped Onion
Sweet Corn
Ginger
Garlic
Green Chillies
Coconut (Fresh/Frozen)
Cloves
Star Aniseed
Bay leaf
Cardamom
Ghee/ Butter/ Oil

Method
 
1.   Heat oil/butter/ghee in a pan. Add the spices and sauté onion for 2-3 minutes.
2.  Meanwhile, grind in a blender the mint leaves, coconut, ginger, garlic, green chillies to a smooth paste adding very little water.
 
3.  Add the ground mixture above and sweet corn to the pan and sauté for 3-4 minutes. Now add rice and fry 2-3 minutes.
4.  Cook the rice with enough water in a cooker.
5.  Serve the Pudina Rice with Raita, Papad and Pickle.
