Carrot Kheer / Carrot Milk Drink


A rich and delicious combination of carrot and mixed nuts in a form of kheer. A cool drink in summer and a hot drink in winter. A very easy and never failing dessert with perfection J

Chopped Carrot
Whole Milk
Almond
Cashew Nut
Sugar
1 Cup
2 Cups
¼ Cup

Method
1.  Cook chopped carrot, almonds and cashew nuts together in a pressure cooker with ½ glass of water for 3-4 whistles.
 
2.  Let the mixture cool. Peel the skin/ blanch of almond.
3.  Grind cooked almond, cashew nuts and cooked carrot to smooth paste.
 
Note: Grind these with the water we used to cook carrot and the nuts.
4.  Meanwhile boil milk and add sugar. Add the ground paste and mix well. Adjust the consistency of the kheer by adding some water. (The consistency of the kheer should not be too thick nor too thin, should be able to drink in a glass) Taste check for sugar.
 
5.  Let the kheer boil nicely on low flame for 5 minutes.
6.  Garnish with almond pieces and cooked carrot pieces.
