Carrot Curry


Carrot curry can also be eaten as salad. Simple, tasty and healthy.

Grated Carrot
Slit Green Chillies
Grated Ginger
Curry Leaves
Grated Coconut (Optional)
Lemon Juice
Salt

Seasoning
Mustard
Urad Dal
Chana Dal
Asafetida
Oil
1 Tsp.
1 Tsp.

A Pinch
As Reqd.
Method
1.  Season with the above ingredients with oil.
 
2.  Add green chillies, grated ginger, grated carrot and curry leaves. Mix gently.
 
3.  Let it cook on low to medium heat for 7-8 minutes.
4.  Add salt and mix well. Cook for another 4-5 minutes.
5.  Squeeze lemon / lime juice and garnish with grated coconut and serve.
