Pineapple Fried Rice

 


Flavorful, tasty and super easy pineapple fried rice. Cooked with no fancy yet simple ingredients. Trust me you can impress your family with this dish. Fried rice is one of our favorites at home. My family can easily finish off pineapple in a couple of days.

Ingredients:

o   2 Cup cooked Basmati Rice

o   1 Cup diced fresh Pineapple

o   ½ Cup diced carrot

o   ½ Cup diced Onion/ I used Spring onion

o   ¼ Cup green peas

o   3 Cloves garlic minced

o   1 tsp ginger finely chopped

o   ½ tsp Turmeric powder

o   ½ tsp Pepper powder

o   2 Tbsp Coconut oil

o   2 Tbsp Soy Sauce

o   Salt to taste

Garnish:

o   Finely chopped Cilantro

o   Chopped Spring onion

o   Fried Cashew pieces

Method:

o   Set aside cooked Basmati rice, you can use sticky rice too.



o   In a large skillet, heat some oil saute the minced garlic and ginger. Slowly add the onion and carrots. Saute well.



o   Add the pineapple pieces and cook the veggies are soft and the pineapple caramelizes.

o   Add the turmeric and pepper powder mix well.





o   Add the cooked rice, salt and soy sauce. Mix and cook to coat and warm the rice.

o   Garnish with chopped cilantro, green onion and fried cashew pieces.



o    Note: If cooking in pressure cooker, one whistle and simmer for 3-4 mins and put off the stove.
