Udupi Uppittu / Upma
A unique
Upma / uppittu recipe from Udupi is Udupi Uppittu. This is made with Bombay
Rava and a little coconut oil is added to provide this unique flavor. This has a distinctively different taste from usual Upma that you might have relished. Also
ensure that you add minced ginger (for any Upma) and not grated ginger. This
way you can feel light crunchiness and light flavor and aroma of ginger when
you relish this.

Ingredients
|
Sooji / Semolina / Bombay Rava
Green Chillies
Minced Ginger
Curry leaves
Grated Fresh Coconut (Optional)
Cashew Nuts (Optional)
Lime / Lemon Juice
Salt & Sugar
Ghee or Coconut Oil (Optional)
Coriander Leaves

Method
1. Heat oil in a
pan. Add mustard. When it starts to splutter, add Urad dal and Channa Dal and
do the seasoning.
2. To the
seasoning, add slit green chilli, minced ginger, curry leaves and roast for a
few seconds.
3. Now add rava and
Cashewnut and roast on medium flame till it turns light golden color.
4. Meanwhile boil 2
– 2 ¼ cups of water and keep ready.
5. Pour the water
as soon as Rava is roasted. Give a quick mix. See that no lumps are formed.
Add salt, sugar, grated coconut, lemon juice to the boiling mixture.
6. Turn heat on
high (high flame) for a minute and stir again. At this point add ghee or
coconut oil (if you are adding any of these – I recommend as this provides
unique flavor and taste to the Udupi Uppittu J .. especially
coconut oil )
7. Cover the pan
with lid and lower the flame and cook till Upma is done (3-5 minutes).
8. Garnish with
coriander leaves and serve.
