Almond Laddu
Easy,
healthy and delicious dessert/ laddo made with just couple of ingredients-
almond flour, jaggery and ghee. Almond Flour is easily available, I generally
keep a pack of Almond Flour in my pantry. Thanks to my friend Sona
Krishnaswamy for sharing this yummilicious Almond flour laddus.
‘Laddos’
or ‘Laddus’ are largely popular sweet desserts and there are
several varieties of laddus out
there. Here is a recipe shared by Sona using just almond flour and mixed with
aromatic cardamom and jaggery.

Ingredients:
o
2 cups Almond
flour (store bought
almond flour)
o
1 Cup Jaggery
powder
o
2 tsps. Ghee/ Clarified
Butter
o
¼ tsp Cardamom
Powder(optional)
o
Assorted nuts to
garnish(optional)
Method:
o
Take a saucepan
and pan fry the almond flour for 3-4 mins on low to medium heat. Once the flour
is a little warm it helps in binding the laddos.
o
Switch the stove
off add the cardamom powder and the jaggery powder mix well. Transfer the
mixture to a mixie/ blender jar. Pulse the mixture a few times. Add the ghee
and pulse it again for few more seconds.
o
The mixture
starts coming together. Do not blend it too much.
o
Transfer the
mixture to a mixing bowl. At this point you can add assorted roasted chopped
nuts of your liking.
o
Take small
portions of the mixture and try making the laddos. If it doesn’t break, it’s
the perfect consistency. Else add ½ tsp of ghee and pulse it again and make the
laddos.
