Khara Kadubu


 With the Ganesh Chaturthi round the corner, I am posting the recipe for Khara Kadubu. Sihi (sweet) kadubu and khara (spicy) kadubu are the key dishes prepared for this occasion in Karnataka. I have already posted recipe for (sweet ) Sihi Kadubu.

Ingredients
 
 
 
For Covering:
Maida
Salt
Water
For Filling:
Urad Dal
Chana Dal
Sliced Coconut
Grated Ginger
Chopped Curry Leaves
Salt
Asafetida
 
½ Cup

Method
1.  Soak urad dal and chana dal separately for 2 hours.
2.  Grind urad dal without adding water to a smooth paste. Take it out in a mixing bowl.
 
3.  Add chopped curry leaves, grated ginger, finely sliced / chopped coconut, asafetida, salt and soaked chana dal to the batter and mix well.
 
4.  In another mixing bowl add salt and maida and mix add water slowly and mix well so that no lumps are formed. The batter should be as thick as idly batter.
 
5.  Cut banana leaves to small square shape. Pour this batter on the leaf and spread the batter like dosa.
 
6.  Place the urad dal filling thick batter in the center of dosa and fold the banana leaf so that it half folded.
 
7.  Place this filling in the idli stand as and when you complete the whole process.
 
8.  Steam the dumplings / kadubu just like idli for 20- 25 minutes.
 
 
9.  Take the banana leaf out while serving. Serve khara kadubu with spicy chana dal chutney .
