Sihi Kadubu


Sweet/ Sihi Kadubu is a coconut and jaggery dumpling. This dish is usually prepared on Ganesh Chaturthi along with Khara Kadabu. The coating or the covering of this Kadubu is prepared with rice flour dough. Here is an easy and an instant way to make the covering, try out !!!!

Ingredients
For Covering:
Maida
Salt
Water
Banana Leaf / Turmeric Plant Leaf
For Filling:
Grated Coconut
Grated Jaggery
Cardamom Powder

½ Cup
To Taste
¼ Cup
 To cover dumplings

1 Cup
½ Cup
½ Tsp.
Method
1.  Mix the grated coconut and jaggery together. Add cardamom powder.

2.  In a pan heat this mixture on low heat till there is very little moisture.
3.  Let it cool, set aside.
4.  In another mixing bowl add salt and maida and mix. Add water slowly and mix well so that no lumps are formed. The batter should be as thick as idly batter.

5.  Cut banana leaves/ Arishina Leaves to small square shape. Pour this batter on the leaf and spread the batter like dosa.

Note: Turmeric Plant Leaves provide a nice aroma to the Kadabu. Banana leaves are alternative if you cannot get Turmeric Plant leaves.
6.  Place the coconut and jaggery filling in the center of the spread and fold the banana leaf into half.

7.  Place this filling in the idli stand as and when you complete the whole process.



8.  Steam the dumplings / kadubu just like idli for 20- 25 minutes.

9.  Enjoy hot Sweet Kadabu with ghee !!
