Gajar Ka Halwa


 I am back to actively blogging again now after fun filled holidays. I start with Gajar ka halwa one the most known Indian desserts. While this is yummy to relish, it takes some effort to prepare. But the effort is worth the result!! So be brave and try this now!!
Hot Gajar Halwa topped with Cold vanilla ice cream is a good variation to try!!

Ingredients
Carrot
Sugar
Almond
Cashews
Milk
Ghee
4-5 Large
1 Cup
1 Tbsp.
1 Tbsp.
1 Cup
2 Tbsp.
Method
1.     Peel the carrots nicely and wash them thoroughly. Now grate the carrots.
2.     Pressure cook the carrots with 1 cup milk for 4 whistles. Transfer the cooked carrots to a heavy bottom pan.
3.     Cook on a medium flame till the milk evaporates. Add sugar to your taste. Cook for 15 minutes.


4.     Powder the almonds and cashews to smooth. Add this powder and mix well. Cook for 10 minutes.
5.     Now in a separate pan fry the chopped cashews with ghee till gold. Just before switching off the stove add the raisins and fry.
6.     Add the fried dry fruits on to the cooking carrot and mix well.
7.      Cook on low for 10 more minutes and switch off the stove.
8.     Gajar halwa ready to eat.
