Quinoa Vegetable Pulav


Quinoa is a great alternative for rice. Here is a protein and vegetable packed dish. The other day I bought tricolored quinoa which looked tempting to me. Hope you all will like it too.

Quinoa
Chopped Veggies
Green Chillies
Chopped Ginger
Turmeric Powder
Bay Leaf
Cardamom
Cinnamon
Salt / Sugar
Cumin Seeds

Method



 
1.     Chop all the veggies lengthwise. Wash Quinoa well and soak in water for ½ an hour.
 
2.     Heat oil in a pan. Add cumin seeds, now slowly start adding the whole spices, and give a quick stir.
3.     Add the chopped veggies, turmeric powder, green peas, chilli and chopped ginger. Stir it for 5 minutes.
 
4.     Meanwhile drain the water from quinoa and set it ready. Bring 1.5 cup of water to boil and keep it ready as well.
 
5.     Add the drained quinoa to the veggies and sauté for 3-4 minutes. Now add the hot water to the quinoa mixture. Add salt/ sugar and lime juice and mix well.
 
 
6.     Cover the pan with a lid and reduce the flame. Cook for 20 minutes.
7.     Put of the heat and slowly fluff the cooked quinoa.
 
8.     Garnish with coriander leaves and serve Quinoa Pulav.
