My family is big fan of soups and Mexican cuisine! Presenting you a lip smacking soup “Veggie Tortilla Soup”. This soup is easy to make and relish. It is spicy and flavorful and taste Indian at times!
Loved adding turmeric and chilli powder (Indian touch). Top the soup with avocado, cilantro, sour cream, tortilla chips and a squeeze of lime. I loved crushing the tortilla chips on them :P
o 1 Chopped Yellow onion
o ½ Yellow Pepper
o ½ Cup Broccoli
o 1 Cup Sweet Corn Kernels
o 1 Cup Black Bean
o 4-5 Finely Chopped Garlic
o 1 Tbsp. Finely chopped Cilantro
o 1.5 Tsp. Jalepeno
o 1 Tsp Cumin Powder
o ½ Tsp. Coriander Powder
o ½ Tsp. Turmeric Powder
o ½ Tsp. Red Chilli Powder
o ½ Cup Tomato Puree
o Lemon Juice
o 1 Tbsp. Oil
o 4 Cups Water/ Vegetable Broth
o Salt to taste
o Finely chopped Cilantro, Sliced Red Onion, Sour Cream, Tortilla Chips, Sour Cream, Sliced Avocado, lemon/lime wedges and Cheese (if you like)- Queso fresco or Feta cheese
· Heat oil (I used Avocado oil) in a pot. Add chopped onion and chopped garlic and Saute it for couple of minutes.
· To this add Yellow Capsicum, Jalapeno and sauté for a minute. Add Broccoli (You can use veggies of your choice like Zucchini/ Carrots also), add the corn kernels and the black bean and give a quick mix.
Note: Canned Black bean can also be used; you need to drain the canned one. Here in this recipe I have soaked the black beans for 4-5 hours and pressured cooked it with water and salt up to 1 whistle. Drained the water and used the black bean J.
· Add tomato puree and 4 cups water, salt and let it boil. You can use vegetable broth instead of water.
· Top the soup with the avocado, red onion, tortilla chips and sour cream. Serve with lemon/lime wedges.
